Instructions

  1. 1

Macerate the strawberries: toss the sliced strawberries with 3 tbsp caster sugar. Set aside for at least 30 minutes until they release their juices and become syrupy.

  2. 2

Preheat oven to 220°C (425°F). Whisk together the flour, 2 tbsp sugar, baking powder, and salt. Cut in the cold butter using your fingertips or a pastry cutter until the mixture resembles coarse crumbs with some pea-sized pieces remaining.

  3. 3

Add the cold cream and vanilla. Stir until just combined — do not overmix. Turn onto a lightly floured surface and pat to 2.5 cm (1 inch) thickness. Cut out 8 rounds with a 7 cm cutter.

  4. 4

Place on a lined baking sheet, brush tops with cream, and bake for 12–15 minutes until golden. Cool on a wire rack.

  5. 5

Whip the cream with icing sugar and vanilla to soft peaks.

  6. 6

Split the biscuits in half. Spoon macerated strawberries and their juices onto the bottom half. Add a generous dollop of whipped cream. Replace the top. Serve immediately.
