Instructions

  1. 1

Pat the beef strips completely dry and season generously with salt and pepper just before cooking. Dry beef sears; wet beef steams — this step is critical.

  2. 2

Heat 1 tbsp oil in a large, heavy pan over the highest possible heat. Sear the beef in a single layer for 60–90 seconds per side until deeply browned. Work in batches — do not crowd the pan. Remove and set aside. The beef should be rare at this stage.

  3. 3

Reduce heat to medium. Add the butter and remaining oil. Cook the onion for 6 minutes until soft and golden. Add the garlic and cook for 1 minute.

  4. 4

Increase heat to high. Add the mushrooms and cook for 5–6 minutes without stirring initially, until they are golden and have released and reabsorbed their liquid.

  5. 5

Add the Worcestershire sauce and Dijon mustard. Stir to coat the mushrooms. Pour in the beef stock and bring to a simmer. Cook for 3 minutes until slightly reduced.

  6. 6

Remove from heat and stir in the sour cream — adding it off the heat prevents it from curdling. Return the beef and any resting juices to the pan. Stir gently to combine and warm through over very low heat for 2 minutes. Do not boil.

  7. 7

Taste and adjust seasoning. Serve immediately over buttered egg noodles or tagliatelle, scattered with fresh parsley and a dollop of extra sour cream.
