Instructions

  1. 1

Preheat oven to 200°C (400°F). Toss the pepper, zucchini, red onion, and cherry tomatoes with 2 tbsp olive oil, garlic, oregano, salt, and pepper on a baking sheet. Roast for 20 minutes until tender and slightly caramelised.

  2. 2

Reduce oven to 180°C (350°F). Whisk the eggs and milk together in a bowl. Season with salt and pepper.

  3. 3

Heat the remaining 1 tbsp olive oil in a 24 cm oven-safe skillet over medium heat. Add the roasted vegetables and spread evenly.

  4. 4

Pour the egg mixture over the vegetables. Scatter the crumbled feta on top. Cook on the stovetop for 3–4 minutes until the edges begin to set.

  5. 5

Transfer to the oven and bake for 12–15 minutes until the centre is just set and the top is lightly golden. A skewer inserted in the centre should come out clean.

  6. 6

Rest for 5 minutes before slicing. Scatter with fresh basil. Serve warm or at room temperature.
