Instructions

  1. 1

Poach the shrimp: bring a small pot of salted water to a simmer. Add the shrimp and cook for 2–3 minutes until just pink and curled. Drain and cool. Slice each shrimp in half lengthways.

  2. 2

Cook the rice vermicelli according to packet instructions. Drain, rinse under cold water, and toss with a few drops of sesame oil to prevent sticking.

  3. 3

Make the dipping sauce: whisk together the hoisin, peanut butter, rice vinegar, sesame oil, and garlic. Add warm water until the sauce is pourable. Taste and adjust. Pour into a small bowl and top with crushed peanuts.

  4. 4

Set up a rolling station: a large shallow bowl of warm water, and all fillings arranged in separate piles.

  5. 5

Dip one rice paper wrapper in the warm water for 10–15 seconds until just pliable — it will continue to soften as you work. Lay flat on a clean, damp surface.

  6. 6

In the lower third of the wrapper, layer a lettuce leaf, a small bundle of noodles, carrot, cucumber, avocado, and herbs. Place 3–4 shrimp halves (cut-side up for a pretty presentation) in a row above the filling.

  7. 7

Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly upward to enclose. The shrimp will show through the translucent wrapper. Serve immediately with the peanut dipping sauce.
