Roasted Cauliflower Steaks

Instructions

  1. 1

Preheat oven to 220°C (425°F). Remove the outer leaves from each cauliflower and trim the base flat. Slice each head into 2–3 thick steaks (about 2.5 cm / 1 inch), cutting through the core so they hold together.

  2. 2

Brush both sides of each steak generously with olive oil. Mix the cumin, smoked paprika, and turmeric and dust over both sides. Season with salt and pepper.

  3. 3

Place on a large baking tray in a single layer. Roast for 20 minutes, then carefully flip and roast for a further 15–20 minutes until deeply golden and caramelised.

  4. 4

Make the tahini sauce: whisk together the tahini, lemon juice, garlic, and a pinch of salt. Add cold water one tablespoon at a time until the sauce is smooth and pourable.

  5. 5

Spread the tahini sauce over a large serving platter.

  6. 6

Arrange the cauliflower steaks over the tahini. Scatter with pomegranate seeds, toasted pine nuts, fresh parsley, and mint. Serve with lemon wedges.
