Ingredients

  • 4 large egg whites, room temperature
  • 220 g (1 cup) caster sugar
  • 1 tsp white wine vinegar
  • 1 tsp cornflour
  • 1 tsp vanilla extract
  • 300 ml (1¼ cups) heavy whipping cream
  • 2 tbsp icing sugar
  • 500 g (1 lb) fresh strawberries, hulled and halved
  • 2 tbsp strawberry jam, warmed (for glazing)
  • Fresh mint leaves, to garnish
Strawberry Pavlova

Instructions

  1. 1

Preheat oven to 150°C (300°F). Draw a 22 cm circle on a sheet of parchment paper, flip it over, and place on a baking sheet.

  2. 2

Beat the egg whites with an electric mixer on medium speed until soft peaks form. Gradually add the caster sugar, one tablespoon at a time, beating on high until the meringue is thick, glossy, and holds stiff peaks — about 8 minutes total.

  3. 3

Fold in the vinegar, cornflour, and vanilla with a large metal spoon.

  4. 4

Spoon the meringue onto the circle, building up the sides slightly higher than the centre to create a well for the cream. Bake for 1 hour 15 minutes until the outside is crisp and dry.

  5. 5

Turn off the oven and leave the pavlova inside to cool completely — at least 2 hours. Do not open the oven door. The pavlova will crack slightly; this is normal.

  6. 6

Whip the cream with icing sugar to soft peaks. Spoon into the centre of the pavlova. Toss the strawberries with the warmed jam and pile on top. Garnish with mint and serve immediately.
