Lemon Madeleines

Perfectly tender, shell-shaped French cakes with a golden crust, a soft crumb, and a bright lemon fragrance — the secret is resting the batter overnight.

Instructions

  1. 1

Whisk the eggs, caster sugar, and honey together in a bowl until pale and slightly thickened, about 3 minutes.

  2. 2

Sift in the flour and baking powder. Add the lemon zest and juice. Fold gently until just combined.

  3. 3

Fold in the melted butter until the batter is smooth and glossy. Cover and refrigerate for at least 1 hour, or overnight — this rest is what creates the signature hump.

  4. 4

Preheat oven to 200°C (400°F). Generously butter a madeleine tin and dust with flour, tapping out the excess. Chill the tin in the freezer for 5 minutes.

  5. 5

Spoon the cold batter into the moulds, filling each about three-quarters full. Do not spread it.

  6. 6

Bake for 10–12 minutes until the edges are golden and the characteristic hump has risen in the centre. Immediately unmould onto a wire rack. Dust with icing sugar and serve warm.
