Lemon Garlic Shrimp Pasta

Instructions

  1. 1

Cook the pasta in a large pot of well-salted boiling water until al dente. Reserve 250 ml (1 cup) of pasta water before draining.

  2. 2

Pat the shrimp dry and season with salt and pepper. Heat 2 tbsp olive oil in a large skillet over high heat. Cook the shrimp for 1–2 minutes per side until pink and just cooked through. Remove and set aside.

  3. 3

Reduce heat to medium. Add the remaining olive oil and the garlic. Cook for 1–2 minutes until golden and fragrant — watch it closely.

  4. 4

Add the chilli flakes and white wine. Let it bubble for 2 minutes. Add the lemon juice and zest.

  5. 5

Add the drained pasta to the pan with a splash of pasta water. Toss vigorously. Add the cold butter cubes and toss until emulsified into a glossy sauce, adding more pasta water as needed.

  6. 6

Return the shrimp to the pan and toss to combine. Fold in the parsley. Season with salt and pepper. Serve immediately with Parmesan if desired.
