Instructions

  1. 1

Combine the ground beef, Worcestershire sauce, garlic powder, and onion powder in a bowl. Mix gently — overworking makes tough patties. Divide into 4 equal portions and shape into patties about 1.5 cm thick. Make a slight indent in the centre of each to prevent doming. Season generously with salt and pepper on both sides.

  2. 2

Heat a cast iron skillet or grill pan over high heat until smoking. Add a thin film of oil.

  3. 3

Cook the patties for 3–4 minutes without moving until a deep brown crust forms. Flip and cook for 2–3 minutes more for medium. Place a cheese slice on each patty in the last minute of cooking and cover briefly to melt.

  4. 4

Rest the patties for 2 minutes.

  5. 5

Toast the buns in butter in the same pan for 1–2 minutes until golden.

  6. 6

Build the burgers: spread the bottom bun with mayo and mustard. Add lettuce, tomato, the patty, pickles, onion, and ketchup. Serve immediately.
