Instructions

  1. 1

Make the dough: pour the just-boiled water over the flour and salt and mix with a fork until a shaggy dough forms. Knead for 5 minutes until smooth. Cover and rest for 30 minutes — the hot water makes the dough pliable and easy to work.

  2. 2

Make the filling: combine all filling ingredients and mix vigorously in one direction for 2 minutes until the mixture becomes sticky and cohesive. This develops the proteins and creates a juicy, bouncy texture. Refrigerate while you roll the wrappers.

  3. 3

Divide the dough into 24 equal pieces. Roll each into a thin circle about 9 cm in diameter, slightly thicker in the centre than the edges.

  4. 4

Place 1 heaped teaspoon of filling in the centre of each wrapper. Fold the wrapper in half over the filling and pleat the front edge against the flat back edge, making 5–6 pleats to seal. Press firmly to ensure no gaps.

  5. 5

Heat the oil in a large, lidded non-stick pan over medium-high heat. Place the dumplings flat-side down in a single layer. Cook for 2 minutes until the bases are golden.

  6. 6

Pour in the water (it will spit), immediately cover with the lid, and steam for 6–7 minutes until the water has evaporated and the wrappers are cooked through.

  7. 7

Remove the lid and cook for 1–2 minutes more until the bases are deeply golden and crisp again. Slide onto a plate base-side up to show off the crust. Serve immediately with the dipping sauce.
