Instructions

  1. 1

The day before (optional but recommended): place the beef in a bowl with the wine, carrot, sliced onion, and garlic. Cover and marinate in the fridge overnight. Drain and pat the beef dry, reserving the marinade.

  2. 2

Preheat the oven to 160°C (325°F). In a large Dutch oven, cook the lardons in olive oil over medium heat until golden. Remove with a slotted spoon. In the same fat, brown the beef in batches — don't crowd the pan — until deeply seared on all sides. Remove and set aside.

  3. 3

Add the carrot and sliced onion to the pot and cook for 5 minutes. Stir in the tomato paste and flour and cook for 1 minute. Pour in the reserved marinade (or fresh wine) and stock. Scrape up all the browned bits.

  4. 4

Return the beef and lardons to the pot. Add the bouquet garni. The liquid should just cover the meat — add more stock if needed. Bring to a simmer, cover, and transfer to the oven.

  5. 5

Braise for 2½–3 hours until the beef is completely tender and yields easily to a fork. Check every hour and add a splash of stock if the liquid reduces too much.

  6. 6

While the beef braises, cook the pearl onions in butter over medium heat until golden, about 10 minutes. In the same pan, sauté the mushrooms over high heat until browned. Set both aside.

  7. 7

Remove the bouquet garni. Stir in the pearl onions and mushrooms. Taste and adjust seasoning. Serve in wide bowls over buttered egg noodles or mashed potato, finished with fresh parsley.
