Grilled Corn & Cotija Salad (Esquites)

Mexico's beloved street corn transformed into a salad — charred corn kernels tossed with a smoky, tangy crema dressing, crumbled cotija, fresh coriander, and a hit of chilli and lime.

20 min4 servings

Ingredients

  • 6 ears of corn, husked (or 600 g frozen corn kernels, thawed)
  • 100 g cotija cheese (or feta), crumbled
  • For the dressing: 3 tbsp mayonnaise, 3 tbsp sour cream or crème fraîche, juice of 2 limes, 1 clove garlic (minced), 1 tsp smoked paprika, ½ tsp chilli powder, salt
  • Large handful fresh coriander, roughly chopped
  • 2 spring onions, thinly sliced
  • 1 jalapeño, finely diced (seeds removed for less heat)
  • Extra lime wedges and chilli flakes, to serve

Instructions

  1. 1

Heat a cast iron griddle or barbecue to very high heat. Grill the corn cobs directly on the grates, turning every 2–3 minutes, for 10–12 minutes total until charred in spots all over. The char is the flavour — don't be timid.

  2. 2

Cool the corn slightly, then stand each cob upright and slice the kernels off with a sharp knife, cutting close to the cob.

  3. 3

Make the dressing: whisk together the mayonnaise, sour cream, lime juice, garlic, smoked paprika, and chilli powder until smooth. Season with salt.

  4. 4

Toss the warm corn kernels with the dressing — the warmth helps the corn absorb the flavours.

  5. 5

Add the spring onions, jalapeño, and most of the coriander. Toss to combine.

  6. 6

Taste and adjust — more lime for brightness, more chilli for heat, more salt as needed. The salad should be bold, smoky, and tangy.

  7. 7

Transfer to a serving bowl or platter. Scatter the cotija generously over the top, followed by the remaining coriander and a pinch of chilli flakes. Serve with extra lime wedges — this salad is best eaten while the corn is still slightly warm.
