Instructions

  1. 1

Char the onion and ginger: place them cut-side down directly over a gas flame or under a hot grill until blackened in spots, about 5 minutes. This is essential for the smoky depth of the broth.

  2. 2

Toast the star anise, cinnamon, cloves, and coriander seeds in a dry pan for 1–2 minutes until fragrant. Tie in a piece of muslin or place in a tea strainer.

  3. 3

Place the whole chicken in a large pot. Cover with 3 litres of cold water. Bring to a boil, skimming off any grey foam that rises to the surface.

  4. 4

Add the charred onion, ginger, and spice bundle. Reduce heat to a gentle simmer. Cook for 45 minutes until the chicken is cooked through.

  5. 5

Remove the chicken. Shred the breast and thigh meat; discard the carcass. Strain the broth through a fine sieve. Season with fish sauce and sugar.

  6. 6

Cook the rice noodles according to package directions. Divide between deep bowls. Top with shredded chicken. Ladle the hot broth over everything. Serve with bean sprouts, Thai basil, chilli, lime, and hoisin on the side.
