Fudgy Walnut Brownies

The definitive fudgy brownie — dense, intensely chocolatey, with a crackly top and a centre that yields like ganache, studded with toasted walnuts that add crunch and a bitter counterpoint to the sweetness.

Instructions

  1. 1

Preheat the oven to 180°C (350°F). Grease and line a 20 × 20 cm baking tin with parchment paper, leaving an overhang on two sides for easy removal.

  2. 2

Melt the chocolate and butter together in a heatproof bowl over barely simmering water, stirring until smooth. Remove from heat and cool for 5 minutes.

  3. 3

Whisk the sugar into the chocolate mixture. Add the eggs, egg yolk, and vanilla and whisk vigorously for 2 minutes until the mixture is thick, glossy, and slightly lighter in colour. This step creates the crackly top.

  4. 4

Sift the flour, cocoa, and salt over the chocolate mixture. Fold gently with a spatula until just combined — stop as soon as no dry streaks remain. Do not overmix.

  5. 5

Fold in three-quarters of the walnuts. Pour into the prepared tin and spread evenly. Scatter the remaining walnuts over the top and press in lightly.

  6. 6

Sprinkle with flaky sea salt. Bake for 22–25 minutes. The top should be set and crackly, but the centre should still have a distinct wobble when you shake the tin. A skewer should come out with moist crumbs, not clean.

  7. 7

Cool completely in the tin — at least 1 hour. The brownies continue to set as they cool. Lift out using the parchment overhang and cut into 16 squares with a sharp knife, wiping the blade between cuts. The fudgier the centre, the better the brownie.
