Instructions

  1. 1

Blanch the beef bones: place in a large pot, cover with cold water, and bring to a boil. Boil for 10 minutes, then drain and rinse the bones thoroughly under cold water. This removes impurities for a clear broth.

  2. 2

Char the aromatics: hold the onion and ginger halves directly over a gas flame (or place under a hot grill) for 5–8 minutes, turning, until blackened and fragrant. This is essential for the broth's depth.

  3. 3

Toast the spices in a dry pan for 1 minute until fragrant. Tie in a piece of cheesecloth or place in a spice bag.

  4. 4

Return the blanched bones to the pot with the brisket, charred aromatics, spice bag, and 3 litres of cold water. Bring to a boil, then reduce to a very gentle simmer. Cook for 3 hours, skimming any foam regularly.

  5. 5

Remove the brisket after 1.5–2 hours when tender. Slice thinly and set aside. Continue simmering the bones. Strain the broth through a fine sieve. Season with fish sauce, sugar, and salt.

  6. 6

Soak the rice noodles in cold water for 30 minutes, then cook in boiling water for 1–2 minutes until just tender. Divide among bowls. Top with sliced brisket and raw sirloin. Ladle the boiling broth over — it will cook the raw beef. Serve with all the accompaniments.
