Instructions

  1. 1

Season the beef generously on all sides. Heat the olive oil in a cast-iron pan over the highest heat and sear the tenderloin for 2 minutes on each side and the ends until deeply browned all over. Brush immediately with Dijon mustard and cool completely.

  2. 2

Make the duxelles: cook the shallots and garlic in butter over medium heat for 3 minutes. Add the mushrooms and thyme and cook, stirring frequently, for 15–20 minutes until all moisture has evaporated and the mixture is a dry, dark paste. Season and cool completely.

  3. 3

Lay a large sheet of cling film on the bench. Arrange the prosciutto slices in an overlapping rectangle. Spread the duxelles evenly over the prosciutto, leaving a 2 cm border.

  4. 4

Place the beef at the near edge of the prosciutto and roll tightly using the cling film, twisting the ends to form a tight log. Refrigerate for at least 30 minutes — this is essential for the Wellington to hold its shape.

  5. 5

Preheat the oven to 220°C (425°F). Lay the puff pastry on a floured surface. Remove the cling film from the beef roll and place it on the pastry. Wrap tightly, sealing the seam and ends with egg wash. Trim any excess pastry.

  6. 6

Brush the entire surface with egg wash. Score a light crosshatch pattern on top with a sharp knife — do not cut through the pastry. Sprinkle with flaky salt. Bake for 25–28 minutes until the pastry is deep golden.

  7. 7

Rest for 10 minutes before slicing — this is non-negotiable. Cut into thick rounds with a sharp serrated knife and serve immediately with roasted potatoes and a red wine jus.
