Panzanella

Tuscany's brilliant solution to stale bread — torn chunks soaked in the juices of the ripest summer tomatoes, with basil, red onion, and a sharp red wine vinegar dressing that makes the whole thing sing.

20 min4 servings

Ingredients

  • 400 g stale ciabatta or sourdough, torn into rough 3 cm chunks
  • 800 g very ripe mixed tomatoes (a mix of sizes and colours), roughly chopped
  • 1 small red onion, very thinly sliced
  • 1 cucumber, halved, seeded, and roughly chopped
  • Large handful fresh basil leaves, torn
  • For the dressing: 5 tbsp extra-virgin olive oil, 2 tbsp red wine vinegar, 1 tsp Dijon mustard, 1 small clove garlic (minced), salt and cracked black pepper

Instructions

  1. 1

Salt the tomatoes: place the chopped tomatoes in a colander over a bowl. Season generously with salt and toss. Leave for 20 minutes — the salt draws out the tomato juices, which become the base of the dressing.

  2. 2

Soak the red onion in cold water for 10 minutes to remove its sharpness. Drain and pat dry.

  3. 3

Toast the bread: spread the torn bread on a baking tray, drizzle with olive oil, and toast in a 200°C (400°F) oven for 10–12 minutes until golden and crisp on the outside but still slightly chewy inside. Alternatively, grill over charcoal for a smoky flavour.

  4. 4

Make the dressing: whisk together the olive oil, red wine vinegar, mustard, and garlic. Add the reserved tomato juices from the colander. Season generously.

  5. 5

Combine the tomatoes, cucumber, red onion, and toasted bread in a large bowl. Pour over the dressing and toss gently.

  6. 6

Leave to sit for 10–15 minutes — this is essential. The bread absorbs the dressing and tomato juices and transforms from crouton to something entirely different: soft in the centre, still with a little chew.

  7. 7

Taste and adjust — more vinegar, salt, or olive oil as needed. Tear the basil over the top and toss once more. Serve at room temperature, never cold — panzanella is a summer dish and should taste like one.
