  • 2 large eggs, beaten
  • 1 tsp salt
  • ½ tsp black pepper
  • Neutral oil, for deep or shallow frying

Instructions

  1. 1

Using a meat mallet or rolling pin, pound the pork chops to an even thickness of about 1.5 cm (½ inch). Score the fat and connective tissue around the edge with a knife to prevent curling. Season with salt and pepper.

  2. 2

Set up a breading station: flour in one shallow dish, beaten eggs in another, panko in a third. Coat each pork chop in flour (shake off excess), then egg, then panko, pressing firmly so the crumbs adhere in a thick, even layer.

  3. 3

Heat 3–4 cm of neutral oil in a deep skillet or saucepan to 170°C (340°F).

  4. 4

Fry the tonkatsu for 3–4 minutes per side until deeply golden and cooked through (internal temperature 63°C / 145°F). Do not crowd the pan — fry in batches if needed.

  5. 5

Drain on a wire rack for 2 minutes. Slice into thick strips on the diagonal.

  6. 6

Arrange the sliced tonkatsu over steamed rice alongside a mound of shredded cabbage. Drizzle the tonkatsu sauce over the pork. Serve with Japanese mustard and lemon wedges.
