Classic Tiramisu

The definitive Italian no-bake dessert — espresso-soaked ladyfingers layered with a cloud-like mascarpone cream and finished with a generous dusting of cocoa.

Ingredients

  • 500 g (1 lb) mascarpone cheese, room temperature
  • 4 large eggs, separated
  • 100 g (½ cup) caster sugar
  • 300 ml (1¼ cups) strong espresso or very strong coffee, cooled
  • 3 tbsp Marsala wine or dark rum
  • 250 g (9 oz) savoiardi (ladyfinger) biscuits
  • 3 tbsp good-quality cocoa powder, for dusting
  • Pinch of fine salt

Instructions

  1. 1

Beat the egg yolks and sugar together in a large bowl with an electric mixer for 4–5 minutes until pale, thick, and tripled in volume.

  2. 2

Add the mascarpone to the egg yolk mixture and fold gently until smooth and combined.

  3. 3

In a clean bowl, whisk the egg whites with a pinch of salt to stiff peaks. Fold into the mascarpone mixture in three additions, keeping as much air as possible.

  4. 4

Combine the cooled espresso and Marsala in a shallow bowl. Working quickly, dip each ladyfinger briefly — 1–2 seconds per side — into the coffee mixture. Do not soak them or they will become soggy.

  5. 5

Arrange a layer of dipped ladyfingers in a single layer in a 23 x 30 cm (9 x 12 inch) dish. Spread half the mascarpone cream over the top. Repeat with a second layer of ladyfingers and the remaining cream.

  6. 6

Cover and refrigerate for at least 4 hours, or overnight. Just before serving, dust generously with cocoa powder through a fine sieve.
