Instructions

  1. 1

Preheat oven to 200°C (400°F). Place the cherry tomatoes and unpeeled garlic cloves in a large baking dish. Drizzle with 3 tbsp olive oil and season with salt, pepper, chilli flakes, and oregano. Toss to coat.

  2. 2

Place the block of feta in the centre of the dish. Drizzle with the remaining olive oil.

  3. 3

Bake for 30–35 minutes until the tomatoes have burst and are jammy, and the feta is soft and golden at the edges.

  4. 4

Meanwhile, cook the pasta in well-salted boiling water until al dente. Reserve 250 ml (1 cup) of pasta water before draining.

  5. 5

Squeeze the garlic out of its skins into the baking dish. Use a fork to mash the feta and burst tomatoes together into a creamy sauce.

  6. 6

Add the drained pasta to the dish and toss to coat, adding splashes of pasta water to loosen the sauce to your liking. Scatter with fresh basil and serve immediately.
