Herb-Crusted Lamb Chops

Rack of lamb chops with a vivid Dijon and herb crust, seared hard in cast iron and finished in the oven — elegant enough for a dinner party, fast enough for a weeknight.

Instructions

  1. 1

Remove the lamb from the fridge 30 minutes before cooking. Preheat the oven to 200°C (400°F). Mix the rosemary, parsley, garlic, and breadcrumbs together in a bowl.

  2. 2

Season the lamb chops generously on all sides with salt and pepper. Heat the olive oil in a cast-iron skillet over high heat until smoking.

  3. 3

Sear the chops for 2 minutes per side until deeply browned. Don't move them — you want a proper crust. Sear the fat cap briefly by holding the chops on their edge.

  4. 4

Remove from heat. Brush the top of each chop generously with Dijon mustard, then press the herb-breadcrumb mixture firmly onto the mustard to form a crust.

  5. 5

Transfer the skillet to the oven and roast for 6–8 minutes for medium-rare (internal temperature 57°C / 135°F). The crust should be golden and fragrant.

  6. 6

Rest the chops on a warm plate for 5 minutes before serving. Finish with flaky sea salt and a drizzle of olive oil.
