Instructions

  1. 1

Bring a large pot of heavily salted water to a rolling boil. Cook the linguine until 2 minutes shy of al dente — it will finish cooking in the sauce. Reserve 200 ml of pasta water before draining.

  2. 2

While the pasta cooks, heat the olive oil in a large, wide pan over medium heat. Add the garlic and chilli and cook gently for 2 minutes until the garlic is golden and fragrant — do not let it burn.

  3. 3

Increase the heat to high. Add the cherry tomatoes and cook for 2 minutes until they begin to blister and collapse.

  4. 4

Add the prawns in a single layer and cook for 1 minute without moving them. Flip and cook for 30 seconds more — they should be just pink. Do not overcook.

  5. 5

Pour in the white wine and let it bubble and reduce by half, about 2 minutes. Season generously.

  6. 6

Add the drained linguine to the pan along with a generous splash of the reserved pasta water. Toss vigorously over high heat for 1–2 minutes until the sauce coats every strand and is glossy and emulsified. Add more pasta water if needed.

  7. 7

Remove from heat. Add the lemon juice, zest, and most of the parsley. Toss once more. Divide between warm bowls, scatter with the remaining parsley, and finish with a drizzle of your best olive oil and cracked black pepper.
