  • Salt and cracked black pepper
  • To serve: roasted potatoes, green beans, red wine jus

Instructions

  1. 1

Remove the lamb from the fridge 1 hour before cooking. Preheat the oven to 200°C (400°F). Season the racks generously all over with salt and pepper.

  2. 2

Heat the olive oil in a large oven-safe pan over high heat. Sear the racks meat-side down for 3–4 minutes until deeply golden. Sear the sides briefly. Remove from heat and cool for 5 minutes.

  3. 3

Make the herb crust: combine the breadcrumbs, rosemary, parsley, garlic, olive oil, and lemon zest. Season well. The mixture should hold together when pressed.

  4. 4

Brush the meat side of each rack generously with Dijon mustard — this acts as the glue for the crust.

  5. 5

Press the herb crust firmly onto the mustard-coated meat, covering it completely. The crust should be about 5 mm thick.

  6. 6

Stand the racks upright in the pan, bones interlocked (this is called 'guarding'). Roast for 20–25 minutes for medium-rare (internal temperature 57°C/135°F). The crust should be golden and fragrant.

  7. 7

Rest for 10 minutes — this is non-negotiable. The temperature will rise a few degrees and the juices will redistribute. Carve between the bones into individual chops and serve immediately with roasted potatoes and a red wine jus.
