Baked Alaska

Instructions

  1. 1

Line a 1.5 litre (6 cup) bowl with cling film, leaving a generous overhang. Layer the softened ice cream and sorbet into the bowl, pressing firmly. Smooth the top flat. Freeze for at least 4 hours, or overnight, until completely solid.

  2. 2

Place the sponge cake on a parchment-lined baking tray. Unmould the ice cream dome onto the centre of the sponge. Return to the freezer while you make the meringue.

  3. 3

Make the Italian meringue: combine the sugar and water in a small saucepan. Heat to 121°C (250°F) on a sugar thermometer. Meanwhile, whisk the egg whites and cream of tartar to soft peaks. With the mixer running, slowly pour the hot syrup down the side of the bowl. Whisk on high for 5–7 minutes until thick, glossy, and cooled. Beat in the vanilla.

  4. 4

Working quickly, spread the meringue all over the ice cream dome and sponge base in a thick, even layer, making sure there are no gaps. Use a spatula to create decorative swirls and peaks.

  5. 5

Return to the freezer for at least 30 minutes.

  6. 6

Just before serving, use a kitchen blowtorch to toast the meringue all over until golden and caramelised. Alternatively, place under a very hot grill (broiler) for 2–3 minutes. Serve immediately.
