Instructions

  1. 1

Melt the butter with the olive oil in a large, heavy-bottomed pot over medium heat. Add the onions and a pinch of salt. Stir to coat.

  2. 2

Cook the onions, stirring every 5–10 minutes, for 45–60 minutes. They will soften, then turn golden, then a deep mahogany brown. This slow caramelisation is the soul of the soup — don't rush it. Add the sugar halfway through to help the colour.

  3. 3

Add the garlic and cook for 1 minute. Pour in the wine and scrape up any browned bits from the bottom of the pot. Simmer until the wine is almost fully absorbed, about 3 minutes.

  4. 4

Add the stock, thyme, and bay leaf. Bring to a simmer and cook for 20 minutes. Taste and season generously with salt and pepper. Remove the thyme and bay leaf.

  5. 5

Preheat your grill (broiler) to high. Ladle the soup into oven-safe bowls set on a baking tray. Float 2 baguette slices on top of each bowl.

  6. 6

Pile the Gruyère generously over the bread, letting it spill over the edges. Grill for 3–5 minutes until the cheese is bubbling, golden, and beginning to char at the edges. Serve immediately.
