Ingredients

  • 2 cooked lobster tails (about 200 g / 7 oz each), meat removed and roughly chopped
  • 200 g (7 oz) linguine
  • 3 cloves garlic, thinly sliced
  • 1 shallot, finely diced
  • 200 g (7 oz) cherry tomatoes, halved
  • 100 ml (⅓ cup) dry white wine
  • 100 ml (⅓ cup) seafood or chicken stock

  • 3 tbsp extra virgin olive oil
  • ½ tsp chilli flakes
  • 2 tbsp unsalted butter

Lobster Linguine

Instructions

  1. 1

Cook the linguine in well-salted boiling water until al dente. Reserve 1 cup of pasta water before draining.

  2. 2

Heat the olive oil in a large skillet over medium heat. Add the shallot and cook for 3 minutes until softened. Add the garlic and chilli flakes and cook for 1 minute.

  3. 3

Add the tomato paste and stir for 1 minute until it darkens. Pour in the white wine and let it bubble for 2 minutes.

  4. 4

Add the cherry tomatoes and stock. Simmer for 5 minutes until the tomatoes soften and the sauce reduces slightly.

  5. 5

Add the drained linguine and a splash of pasta water. Toss over medium heat. Add the butter and toss until the sauce is glossy and coats the pasta.

  6. 6

Add the lobster meat and toss gently for 1 minute just to warm through — do not overcook. Serve immediately, scattered with fresh parsley and lemon zest.
