Classic Tiramisu

The definitive tiramisu — savoiardi soaked in strong espresso and Marsala, layered with a cloud-light zabaglione-based mascarpone cream, and finished with a blizzard of dark cocoa.

Ingredients

  • 500 g mascarpone, at room temperature
  • 6 large egg yolks
  • 120 g caster sugar
  • 60 ml Marsala wine or dark rum
  • 300 ml strong espresso, cooled
  • 200 g savoiardi (ladyfinger biscuits)
  • 30 g high-quality Dutch-process cocoa powder, for dusting
  • Pinch of fine sea salt

Instructions

  1. 1

Whisk the egg yolks, sugar, and Marsala in a heatproof bowl set over a pan of barely simmering water (bain-marie). Whisk vigorously for 8–10 minutes until the mixture is pale, thick, and tripled in volume (zabaglione). Remove from heat and cool for 10 minutes.

  2. 2

Beat the mascarpone with a pinch of salt until smooth. Gently fold the cooled zabaglione into the mascarpone in three additions, keeping as much air as possible.

  3. 3

Pour the cooled espresso into a shallow dish. Working quickly, dip each savoiardo for just 2 seconds per side — they should be moist but not waterlogged.

  4. 4

Arrange a single layer of soaked savoiardi in a 23 × 33 cm dish. Spread half the mascarpone cream evenly over the top.

  5. 5

Repeat with a second layer of soaked savoiardi and the remaining cream. Smooth the surface with a palette knife.

  6. 6

Cover and refrigerate for at least 4 hours, or overnight — the tiramisu improves significantly as it sets and the flavours meld.

  7. 7

Just before serving, dust generously with cocoa powder through a fine sieve. Cut into portions and serve cold.
