Instructions

  1. 1

Heat 1 tbsp butter and the olive oil in a large pot over high heat. Add the mushrooms in a single layer — work in batches if needed — and cook without stirring for 3–4 minutes until deeply golden. Season with salt. Remove and set aside, reserving a handful of the best-looking pieces for garnish.

  2. 2

Reduce heat to medium. Add the remaining butter, onion, and thyme sprigs. Cook for 8 minutes until the onion is soft and golden.

  3. 3

Add the garlic and cook for 1 minute. Pour in the sherry and let it bubble for 30 seconds.

  4. 4

Return the sautéed mushrooms to the pot. Add the stock and soy sauce. Bring to a simmer and cook for 15 minutes.

  5. 5

Remove the thyme sprigs. Use an immersion blender to blend until completely smooth. Stir in the cream and simmer for 5 minutes. Season generously with salt and pepper.

  6. 6

Ladle into bowls. Top with the reserved sautéed mushrooms, a spoonful of crème fraîche, a drizzle of truffle oil, and fresh thyme leaves.
