Instructions

  1. 1

Season the lamb generously. Heat the olive oil in a tagine or heavy Dutch oven over medium-high heat. Brown the lamb in batches for 3–4 minutes per side until deeply coloured. Remove and set aside.

  2. 2

In the same pot, cook the onions over medium heat for 10 minutes until soft and golden. Add the garlic, ginger, ras el hanout, cinnamon, cumin, and turmeric. Cook for 2 minutes until fragrant.

  3. 3

Add the tomatoes and cook for 5 minutes, breaking them up. Return the lamb to the pot and add the stock. Bring to a simmer.

  4. 4

Cover tightly and braise over the lowest heat (or in a 160°C/325°F oven) for 1.5–2 hours until the lamb is completely tender and yielding.

  5. 5

Add the dried apricots, preserved lemon rind, and honey. Stir gently and cook uncovered for a further 20 minutes until the sauce has thickened and the apricots are plump.

  6. 6

Taste and adjust seasoning — the tagine should be warmly spiced, slightly sweet, and deeply savoury. Add a squeeze of lemon if it needs brightness.

  7. 7

Serve over fluffy couscous, scattered with toasted almonds, fresh coriander, and mint. Pass harissa at the table for those who want heat.
