Thai Larb Moo (Spiced Pork Salad)

Thailand's most vibrant salad — minced pork cooked with fish sauce and lime, tossed with toasted rice powder, shallots, fresh herbs, and chilli in a dressing that is simultaneously sour, salty, spicy, and herbal.

Instructions

  1. 1

Make the toasted rice powder: toast 2 tbsp raw jasmine rice in a dry pan over medium heat for 5–7 minutes, stirring constantly, until golden and fragrant. Cool, then grind to a coarse powder in a spice grinder or mortar. This adds a nutty, smoky texture that is essential to larb.

  2. 2

Cook the pork: place the ground pork in a wok or pan over medium-high heat with a splash of water (no oil). Cook, breaking it up, for 5–6 minutes until just cooked through. Do not brown — the pork should remain pale and tender.

  3. 3

Remove from heat. Add the fish sauce, lime juice, and sugar. Stir to combine and taste — the balance should be sour-forward, salty, and slightly sweet.

  4. 4

Add the toasted rice powder and crushed dried chillies. Toss to combine.

  5. 5

Add the shallots and spring onions and toss again.

  6. 6

Taste and adjust — more lime for sourness, more fish sauce for salt, more chilli for heat. Larb should be assertively seasoned.

  7. 7

Add the fresh mint and coriander and toss gently. Transfer to a serving plate immediately — the herbs should be fresh and vibrant. Serve with steamed rice, fresh cabbage leaves for scooping, and cucumber slices to cool the heat.
