Instructions

  1. 1

Preheat oven to 180°C (350°F). Combine the squeezed spinach, feta, ricotta, eggs, spring onions, dill, parsley, and nutmeg in a large bowl. Season with pepper (the feta is salty, so taste before adding salt).

  2. 2

Brush a 23 x 33 cm (9 x 13 inch) baking dish with melted butter. Lay one sheet of phyllo in the dish, letting the edges overhang. Brush with butter. Repeat with 5 more sheets, buttering each one.

  3. 3

Spread the spinach filling evenly over the phyllo base.

  4. 4

Layer the remaining 6 sheets of phyllo on top, buttering each one. Fold in the overhanging edges and brush the top generously with butter.

  5. 5

Score the top layers of phyllo into portions with a sharp knife (do not cut all the way through). Sprinkle with sesame seeds.

  6. 6

Bake for 45–50 minutes until deeply golden and crispy. Rest for 10 minutes before cutting through fully and serving.
