Lemon Drizzle Cake

A beloved British classic — a tender, buttery loaf cake soaked with a sharp lemon syrup while still warm, creating a crackly, tangy crust and impossibly moist crumb.

  • 225 g (1 cup + 2 tbsp) caster sugar
  • 4 large eggs
  • 225 g (1¾ cups) self-raising flour

Instructions

  1. 1

Preheat oven to 180°C (350°F). Grease a 900 g (2 lb) loaf tin and line with parchment.

  2. 2

Beat the butter and sugar together with an electric mixer for 4–5 minutes until very pale and fluffy.

  3. 3

Add the eggs one at a time, beating well after each addition. If the mixture curdles, add a spoonful of flour.

  4. 4

Fold in the flour, baking powder, lemon zest, and milk until just combined.

  5. 5

Pour into the prepared tin and bake for 45–50 minutes until a skewer inserted in the centre comes out clean and the top is golden.

  6. 6

While the cake is still hot in the tin, stir together the drizzle sugar and lemon juice. Poke the surface of the cake all over with a skewer, then slowly pour the drizzle over the top, letting it soak in. Cool completely in the tin before slicing.
