Pear & Almond Frangipane Tart

Instructions

  1. 1

Roll out the pastry and line a 23 cm tart tin. Prick the base, line with baking paper and weights, and blind bake at 180°C (350°F) for 15 minutes. Remove weights and bake 5 minutes more until pale golden.

  2. 2

Make the frangipane: beat butter and sugar until pale and fluffy. Beat in the eggs one at a time, then fold in the ground almonds, flour, and almond extract.

  3. 3

Spread the frangipane evenly into the tart shell.

  4. 4

Thinly slice each pear half crosswise, keeping the slices together. Fan each pear half slightly and press gently into the frangipane, arranging them like spokes of a wheel.

  5. 5

Bake at 180°C (350°F) for 35–40 minutes until the frangipane is golden and set. A skewer inserted in the centre should come out clean.

  6. 6

Warm the apricot jam with a splash of water and brush over the tart while still warm. Dust with icing sugar and serve at room temperature.
