Classic French Lemon Tart

A perfectly set, intensely lemony curd in a crisp, buttery pâte sucrée shell — the kind of tart that makes people ask for the recipe before they've finished their slice.

Ingredients

  • For the pastry (pâte sucrée): 200 g plain flour, 100 g cold unsalted butter (cubed), 60 g icing sugar, 2 egg yolks, 2 tbsp cold water, pinch of salt
  • For the lemon curd filling: 4 large eggs + 2 egg yolks, 180 g caster sugar, Zest of 3 lemons + 150 ml fresh lemon juice (about 4–5 lemons), 150 g unsalted butter (cubed), pinch of salt
  • Icing sugar, to dust

Instructions

  1. 1

Make the pastry: pulse flour, butter, icing sugar, and salt in a food processor until it resembles fine breadcrumbs. Add the egg yolks and water and pulse until the dough just comes together. Flatten into a disc, wrap, and chill for 1 hour.

  2. 2

Roll the pastry to 3 mm thick on a lightly floured surface. Line a 23 cm loose-bottomed tart tin, pressing into the edges. Trim the excess. Chill for 30 minutes.

  3. 3

Blind bake: line the pastry with baking paper and fill with baking beans. Bake at 180°C (350°F) for 15 minutes. Remove the beans and paper, and bake for a further 8–10 minutes until the base is golden and dry.

  4. 4

Make the filling: whisk the eggs, yolks, sugar, lemon zest, and juice in a heavy saucepan. Add the butter and cook over medium-low heat, stirring constantly, until the curd thickens enough to coat the back of a spoon (about 10 minutes). Do not boil.

  5. 5

Strain the curd through a fine sieve into a jug to remove the zest and any cooked egg. Pour immediately into the warm tart shell.

  6. 6

Bake at 150°C (300°F) for 10–12 minutes until the filling is just set with a slight wobble in the centre — it will firm up as it cools.

  7. 7

Cool completely at room temperature, then refrigerate for at least 2 hours. Dust with icing sugar just before serving. Slice with a hot, dry knife for clean edges.
