Instructions

  1. 1

Preheat oven to 190°C (375°F). Toss the peaches with caster sugar, cornstarch, cinnamon, nutmeg, vanilla, and lemon juice in a large bowl. Pour into a 23 x 33 cm (9 x 13 inch) baking dish.

  2. 2

Bake the peaches for 15 minutes until they begin to bubble at the edges.

  3. 3

Meanwhile, make the biscuit topping: whisk together the flour, 2 tbsp sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add the buttermilk and stir until just combined.

  4. 4

Drop spoonfuls of the biscuit dough over the hot peaches, covering most of the surface. Sprinkle with demerara sugar.

  5. 5

Bake for 30–35 minutes until the biscuit topping is golden and cooked through and the peach filling is bubbling around the edges.

  6. 6

Rest for 10 minutes before serving. Scoop into bowls and serve with a generous scoop of vanilla ice cream.
