Bananas Foster

Bananas caramelised in brown sugar and butter, flambéed with rum, and served over vanilla ice cream — a New Orleans classic in 15 minutes.

15 min4 servings

Ingredients

  • 4 ripe but firm bananas, peeled and halved lengthwise
  • 115 g (½ cup) unsalted butter
  • 200 g (1 cup) dark brown sugar, packed
  • 1 tsp ground cinnamon
  • 60 ml (¼ cup) dark rum
  • 1 tsp vanilla extract
  • Good-quality vanilla ice cream, to serve
Bananas Foster

Instructions

  1. 1

Melt the butter in a large, heavy skillet over medium heat. Add the brown sugar and cinnamon. Stir until the sugar dissolves and the mixture begins to bubble, about 2 minutes.

  2. 2

Add the banana halves, cut-side down. Cook for 1–2 minutes until they begin to soften and caramelise. Gently turn and cook for 1 minute more.

  3. 3

Remove the pan from heat. Add the rum and vanilla. Return to heat — the rum will ignite if using a gas flame (or use a long match). Let the flames die down naturally, about 30 seconds.

  4. 4

Spoon the bananas and sauce immediately over scoops of vanilla ice cream. Serve at once.
