Instructions

  1. 1

Make the pastry: pulse flour and butter in a food processor until it resembles breadcrumbs. Add the egg yolk and ice water, pulsing until the dough just comes together. Shape into a disc, wrap, and refrigerate for 30 minutes.

  2. 2

Preheat oven to 190°C (375°F). Roll out the pastry on a lightly floured surface and line a 23 cm (9 inch) tart tin. Prick the base, line with parchment and baking weights, and blind bake for 15 minutes. Remove the weights and bake for 5 minutes more until pale golden.

  3. 3

Cook the lardons in a dry skillet over medium heat until golden and the fat has rendered. Drain on paper towels.

  4. 4

Whisk together the eggs, cream, milk, nutmeg, salt, and white pepper until smooth.

  5. 5

Scatter the lardons and half the Gruyère over the pastry base. Pour in the custard. Top with the remaining Gruyère.

  6. 6

Bake for 30–35 minutes until the custard is just set with a slight wobble in the centre. Rest for 10 minutes before slicing. Serve with a simple green salad.
