Instructions

  1. 1

Preheat the oven to 160°C (325°F). Crush the biscuits to fine crumbs and mix with the melted butter and sugar. Press firmly into the base of a greased 23 cm springform tin. Bake for 10 minutes, then cool.

  2. 2

Beat the cream cheese on low speed until completely smooth — no lumps. Add the sugar and flour and beat until just combined. Scrape down the bowl thoroughly.

  3. 3

Add the vanilla, lemon zest, and salt. Beat briefly. Add the eggs and yolk one at a time, mixing on low speed after each addition — overbeating incorporates air, which causes cracks.

  4. 4

Fold in the sour cream by hand with a spatula. The batter should be completely smooth and pourable.

  5. 5

Wrap the outside of the springform tin tightly in two layers of foil. Pour the filling over the cooled base. Place in a roasting tray and fill with enough boiling water to come 3 cm up the sides of the tin.

  6. 6

Bake for 60–70 minutes until the edges are set but the centre still has a distinct wobble — it will firm up as it cools. Turn off the oven, crack the door open, and leave the cheesecake inside for 1 hour.

  7. 7

Cool completely at room temperature, then refrigerate overnight. Run a thin knife around the edge before releasing the springform. Serve chilled with fresh berries or a warm berry compote.
