Instructions

  1. 1

Heat the olive oil in a large, deep skillet or cast iron pan over medium-high heat. Add the crumbled merguez and cook, breaking it up, for 4–5 minutes until browned. Remove with a slotted spoon and set aside.

  2. 2

In the same pan, cook the onion and peppers over medium heat for 8 minutes until softened. Add the garlic, cumin, smoked paprika, coriander, and cayenne. Stir for 1 minute.

  3. 3

Add the crushed tomatoes and sugar. Season with salt and pepper. Simmer for 10–12 minutes, stirring occasionally, until the sauce thickens.

  4. 4

Return the merguez to the pan and stir to combine.

  5. 5

Use a spoon to create 6 wells in the sauce. Crack an egg into each well. Cover the pan and cook over medium-low heat for 6–8 minutes until the whites are just set but the yolks are still runny.

  6. 6

Remove from heat. Scatter with fresh cilantro and crumbled feta. Serve immediately straight from the pan with crusty bread or warm pita.
