Lamb Chops with Chimichurri

Instructions

  1. 1

Make the chimichurri: combine the parsley, oregano, garlic, shallot, chilli flakes, red wine vinegar, olive oil, and salt in a bowl. Stir well and taste — it should be bright, herby, and tangy. Set aside for at least 15 minutes for the flavours to meld.

  2. 2

Pat the lamb chops dry and season generously with salt and pepper on both sides.

  3. 3

Heat the olive oil in a large cast iron skillet or heavy pan over high heat until smoking.

  4. 4

Cook the lamb chops for 2–3 minutes per side for medium-rare (internal temperature 57°C / 135°F). Work in batches if needed to avoid crowding the pan.

  5. 5

Rest the chops on a board for 3–4 minutes.

  6. 6

Arrange on a platter and spoon the chimichurri generously over the top. Serve with the remaining chimichurri on the side.
