French Apple Cake

A rustic Breton-style cake that is almost more apple than batter — deeply moist, perfumed with vanilla and rum, and finished with a thin, crackly golden crust.

1 hr 10 min8 servings

Ingredients

  • 4 medium apples (about 700 g / 1.5 lbs), peeled, cored, and cut into 1 cm cubes
  • 2 large eggs
  • 150 g (¾ cup) caster sugar
  • 80 ml (⅓ cup) neutral oil
  • 1 tbsp dark rum or calvados (optional)
  • 1 tsp vanilla extract
  • 130 g (1 cup + 2 tbsp) plain flour
  • 1½ tsp baking powder
  • ¼ tsp fine salt
  • Icing sugar, to dust
French Apple Cake

Instructions

  1. 1

Preheat oven to 175°C (350°F). Grease a 23 cm (9 inch) round cake tin and line the base with parchment.

  2. 2

Whisk the eggs and sugar together in a large bowl for 2–3 minutes until pale and slightly thickened.

  3. 3

Whisk in the oil, rum (if using), and vanilla.

  4. 4

Sift in the flour, baking powder, and salt. Fold until just combined.

  5. 5

Fold in the apple cubes — the batter will be very thick and mostly apple. This is correct.

  6. 6

Spread into the prepared tin. Bake for 50–60 minutes until deeply golden on top and a skewer inserted in the centre comes out clean. Cool in the tin for 15 minutes before turning out. Dust generously with icing sugar before serving.
