Spiced Lamb Flatbreads (Lahmacun)

Turkey's beloved street food — paper-thin flatbreads topped with a fragrant minced lamb and tomato paste, blistered in a screaming-hot oven, then rolled around fresh herbs, sumac onions, and a squeeze of lemon.

1 hr6 servings

Ingredients

  • For the dough: 300 g strong white flour, 5 g instant yeast, 1 tsp salt, 1 tsp sugar, 180 ml warm water, 2 tbsp olive oil
  • For the topping: 400 g ground lamb, 1 large onion (very finely diced), 3 cloves garlic (minced), 2 tbsp tomato paste, 1 large tomato (grated), 1 tsp ground cumin, 1 tsp smoked paprika, ½ tsp ground cinnamon, ½ tsp chilli flakes, large handful flat-leaf parsley (finely chopped), salt and pepper
  • To serve: thinly sliced red onion tossed with sumac and salt, fresh flat-leaf parsley, lemon wedges, plain yoghurt

Instructions

  1. 1

Make the dough: combine the flour, yeast, salt, and sugar. Add the water and olive oil and knead for 8 minutes until smooth and elastic. Cover and prove for 45 minutes until doubled.

  2. 2

Make the topping: combine all topping ingredients in a bowl and mix thoroughly — the mixture should be a spreadable paste. Season assertively; the flavour needs to be bold.

  3. 3

Preheat the oven to its maximum temperature (250°C/480°F or higher) with a baking stone or heavy baking tray inside for at least 30 minutes.

  4. 4

Divide the dough into 6 equal balls. On a lightly floured surface, roll each ball as thin as possible — aim for 2 mm, almost translucent. The thinner, the better.

  5. 5

Spread a thin, even layer of the lamb mixture over each flatbread, right to the edges. Use the back of a spoon to press it into the dough.

  6. 6

Slide onto the hot baking stone or tray and bake for 6–8 minutes until the edges are charred and crisp and the lamb is cooked through. Work in batches.

  7. 7

Serve immediately — scatter with sumac onions and fresh parsley, add a squeeze of lemon, and roll up to eat. A dollop of cold yoghurt alongside is essential.
