Vanilla Panna Cotta

Silky, barely-set Italian cream dessert perfumed with real vanilla — elegant, make-ahead, and endlessly versatile with a fresh berry coulis or caramel sauce.

Ingredients

  • 600 ml (2½ cups) heavy cream
  • 200 ml (¾ cup) whole milk
  • 80 g (⅓ cup) caster sugar
  • 1 vanilla bean, split and seeds scraped (or 2 tsp vanilla extract)
  • 2½ tsp (7 g) powdered gelatine
  • 3 tbsp cold water
  • Fresh berries, berry coulis, or caramel sauce, to serve

Instructions

  1. 1

Sprinkle the gelatine over the cold water in a small bowl. Let it bloom for 5 minutes until it absorbs the water and becomes spongy.

  2. 2

Combine the cream, milk, sugar, and vanilla bean (pod and seeds) in a saucepan over medium heat. Stir until the sugar dissolves. Heat until just below a simmer — small bubbles will appear at the edges. Do not boil.

  3. 3

Remove from heat. Add the bloomed gelatine and whisk until completely dissolved. If using vanilla extract instead of a bean, add it now.

  4. 4

Remove the vanilla pod. Strain the mixture through a fine sieve into a jug.

  5. 5

Lightly oil 6 ramekins or dariole moulds with a neutral oil. Pour the cream mixture evenly among them. Cool to room temperature, then refrigerate for at least 4 hours, or overnight, until firmly set.

  6. 6

To unmould: run a thin knife around the edge of each panna cotta and invert onto a plate. Alternatively, serve directly in the ramekins. Top with fresh berries, berry coulis, or caramel sauce.
