Coconut Dahl

Instructions

  1. 1

Heat the oil in a large pot over medium heat. Cook the onion for 8 minutes until golden. Add the garlic and ginger and cook for 2 minutes.

  2. 2

Add the cumin, coriander, turmeric, and garam masala. Stir for 1 minute until fragrant.

  3. 3

Add the diced tomato and cook for 3 minutes until it breaks down.

  4. 4

Add the rinsed lentils, coconut milk, and stock. Bring to a boil, then reduce heat and simmer for 20–25 minutes, stirring occasionally, until the lentils are completely soft and the dahl is thick and creamy. Season generously with salt.

  5. 5

Make the tarka: heat the coconut oil in a small pan over high heat until shimmering. Add the mustard seeds — they will pop immediately. Add the curry leaves and dried chillies and fry for 30 seconds until fragrant.

  6. 6

Pour the tarka over the dahl and stir through. Scatter with fresh cilantro. Serve with steamed basmati rice and warm naan.
