  • 6 ears fresh corn (or 600 g / 4 cups frozen corn kernels)
  • 200 g (7 oz) smoked bacon, diced
  • 3 medium Yukon Gold potatoes, diced into 1 cm cubes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 stalks celery, diced

  • 250 ml (1 cup) heavy cream
  • 1 tsp smoked paprika
  • 2 tbsp unsalted butter
  • Fresh chives and cracked black pepper, to serve
Creamy Corn Chowder

Instructions

  1. 1

If using fresh corn, cut the kernels off the cobs. Run the back of your knife down the cobs to scrape out the milky liquid — add this to the pot for extra flavour.

  2. 2

Cook the bacon in a large pot over medium heat until crispy. Remove with a slotted spoon and set aside. Leave 1 tbsp of fat in the pot.

  3. 3

Add the butter, onion, celery, and garlic to the pot. Cook for 6–8 minutes until softened. Add the smoked paprika and stir for 30 seconds.

  4. 4

Add the potatoes, corn, and stock. Bring to a boil, then reduce heat and simmer for 15 minutes until the potatoes are completely tender.

  5. 5

Use an immersion blender to partially blend the soup — about 4–5 pulses. You want a thick, creamy base with plenty of whole corn and potato pieces remaining.

  6. 6

Stir in the cream and simmer for 5 minutes. Season generously with salt and pepper. Serve topped with the crispy bacon, fresh chives, and cracked black pepper.
