Vietnamese Beef Pho (Phở Bò)

A deeply aromatic, crystal-clear beef broth built over hours with charred ginger and onion, star anise, and cinnamon — ladled over silky rice noodles and paper-thin raw beef.

4 hr4 servings

Ingredients

  • For the broth: 1.5 kg beef bones (knuckle and marrow), 500 g beef brisket, 1 large onion (halved), 8 cm fresh ginger (halved lengthways), 3 star anise, 1 cinnamon stick, 4 cloves, 1 tsp coriander seeds, 2 tbsp fish sauce, 1 tbsp rock sugar or brown sugar, 3 L water
  • 300 g dried flat rice noodles (banh pho), soaked per packet instructions
  • 200 g beef sirloin or eye fillet, very thinly sliced (partially freeze for easier slicing)
  • To serve: bean sprouts, fresh Thai basil, fresh coriander, thinly sliced red chilli, lime wedges, hoisin sauce, sriracha

Instructions

  1. 1

Blanch the beef bones in boiling water for 10 minutes. Drain and rinse thoroughly under cold water — this removes impurities and ensures a clear broth.

  2. 2

Char the onion and ginger directly over a gas flame or under a hot grill until blackened on the outside — about 5 minutes. This is the defining flavour step of pho.

  3. 3

Toast the star anise, cinnamon, cloves, and coriander seeds in a dry pan for 2 minutes until fragrant. Place in a muslin spice bag or tea strainer.

  4. 4

Place the blanched bones, brisket, charred onion and ginger, and spice bag in a large pot. Cover with 3 L of cold water. Bring to a boil, then reduce to the gentlest possible simmer. Cook for 3–4 hours, skimming any foam regularly.

  5. 5

Remove the brisket after 2 hours when tender. Slice thinly and set aside. Continue simmering the bones. Strain the finished broth through a fine sieve. Season with fish sauce and rock sugar — it should be deeply savoury, slightly sweet, and fragrant.

  6. 6

Cook the soaked noodles in boiling water for 1–2 minutes until just tender. Drain and divide between deep bowls. Top with sliced brisket and the raw sirloin slices.

  7. 7

Bring the broth to a rolling boil and ladle it over the raw beef — the heat will cook the thin slices instantly. Serve immediately with the full garnish plate alongside.
