Slow-Cooked Chilli Con Carne

A deeply flavoured, slow-cooked chilli built on dried chillies, dark chocolate, and a long braise — the kind that fills the kitchen with an intoxicating smell and tastes even better the next day.

Instructions

  1. 1

Season the beef generously. Heat the oil in a large Dutch oven over high heat. Brown the beef in batches for 3–4 minutes per side until deeply caramelised. Do not crowd the pan. Remove and set aside.

  2. 2

Reduce heat to medium. Cook the onions for 8 minutes until soft and golden. Add the garlic, tomato paste, chilli powder, cumin, paprika, oregano, and cinnamon. Cook for 2 minutes until fragrant.

  3. 3

Return the beef to the pot. Add the tomatoes and stock. Bring to a simmer, cover, and cook over low heat for 1.5 hours until the beef is tender enough to break apart with a spoon.

  4. 4

Add the kidney beans and dark chocolate. Stir until the chocolate melts into the sauce — it adds depth and a subtle richness without tasting chocolatey.

  5. 5

Cook uncovered for a further 30 minutes until the sauce has thickened to a rich, glossy consistency. Use a spoon to break some of the beef into smaller pieces.

  6. 6

Taste and adjust seasoning. The chilli should be deeply savoury, warmly spiced, and slightly smoky. A pinch more chilli powder or a splash of cider vinegar can lift it if needed.

  7. 7

Serve over steamed rice or with cornbread, topped with soured cream, grated cheddar, sliced jalapeños, and fresh coriander. A squeeze of lime over everything brightens the whole bowl.
