  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 spring onions, sliced (white and green parts separated)
  • 1 tbsp toasted sesame seeds
  • Steamed short-grain rice and kimchi, to serve

Instructions

  1. 1

Combine the grated pear, soy sauce, sesame oil, brown sugar, garlic, ginger, and white parts of the spring onions in a bowl. This is your marinade.

  2. 2

Add the sliced beef to the marinade and toss to coat every piece. Cover and refrigerate for at least 2 hours, or up to overnight.

  3. 3

Heat a cast iron skillet or grill pan over very high heat until smoking. Work in batches — do not crowd the pan or the beef will steam instead of caramelise.

  4. 4

Cook each batch for 1–2 minutes per side until the edges are caramelised and slightly charred. The sugar in the marinade will create beautiful colour quickly.

  5. 5

Serve over steamed rice, garnished with the green spring onion tops and toasted sesame seeds. Serve with kimchi on the side.
