Duck Breast with Cherry Sauce

Instructions

  1. 1

Score the duck skin in a crosshatch pattern, cutting through the fat but not into the flesh. Season generously with salt and pepper.

  2. 2

Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium. Cook for 12–15 minutes, pouring off the rendered fat periodically, until the skin is deeply golden and crispy.

  3. 3

Flip and cook for 3–4 minutes for medium-rare (internal temperature 57°C / 135°F). Rest on a board, skin-side up, for 8 minutes.

  4. 4

Pour off most of the duck fat from the pan, leaving about 1 tbsp. Add the shallot and cook for 2 minutes. Add the thyme and red wine vinegar and let it bubble for 30 seconds.

  5. 5

Add the red wine and reduce by half. Add the stock, honey, and cherries. Simmer for 8–10 minutes until the sauce is glossy and the cherries are tender.

  6. 6

Swirl in the cold butter to finish. Season with salt and pepper. Slice the duck breast and fan over the plate. Spoon the cherry sauce alongside.
