Classic French Omelette

The French omelette is the ultimate test of a cook — pale, silky, and custardy inside, with no colour on the outside.

10 min1 servings

Ingredients

  • 3 large eggs, very fresh
  • 1 tbsp cold unsalted butter, cut into small cubes
  • 1 tsp neutral oil
  • 1 tbsp fresh chives or fines herbes, finely chopped
  • Flaky sea salt and white pepper

Instructions

  1. 1

Crack the eggs into a bowl and beat vigorously with a fork until completely homogeneous — no streaks of white. Season lightly with salt and white pepper.

  2. 2

Heat a 20 cm non-stick pan over medium-high heat. Add the oil and half the butter. When the butter foams and the foam begins to subside, pour in the eggs.

  3. 3

Immediately begin stirring with a heatproof spatula in small, rapid circles while simultaneously shaking the pan. The goal is tiny, creamy curds — not large scrambled egg chunks.

  4. 4

When the eggs are just barely set but still look wet and glossy on top (about 45–60 seconds), remove from heat. Add the remaining cold butter and the herbs to the centre.

  5. 5

Tilt the pan and use the spatula to fold the omelette in thirds, rolling it onto a warm plate seam-side down. It should be pale yellow with no browning. Serve immediately.
